Don't Give up on Liver

Hey There!
 

I love sharing recipes with you guys and updates on the farm and all things BEEF.

I have a confession to make though!

We honor the animal by utilizing as much of the nourishment they produce as possible, BUT what if you don't like every cut?

I don't.

I'm talking about liver, the superfood. It's arguably the most nutrient dense piece of meat you can eat, but for some of us it's an eat your Brussel sprouts situation.

I don't like it rinsed and soaked in milk. I don't like it slathered in onions, and every which way I have tried it just doesn't sit well with my taste buds.
(if you have a favorite recipe you are willing to share go ahead and send it my way I'm game to give it a try)

But the fact remains, it is so, so good for us

I know a lot of you love liver and I'm glad that you do!

I wish I did...

So, I started hiding it in our ground beef and now we get the best of both worlds!

Don't Throw it Out! Add It In!

Here's What You'll Need:

 
 
  • 1 Package of liver
  • 1 Cup of milk
  • Blender or food processor
  • Ice Cube Tray
 

Directions
 

1. Thaw the liver and then rinse in cool water.
2. Soak in milk (or buttermilk) overnight
3. Chop into small pieces and add the liver to blender/processor
4. Blend it up. It should have the appearance of a thick gravy.
5. Freeze serving sizes in an ice cube tray.

Next time you cook ground beef add in a serving of liver and enjoy all the extra good stuff :)
